I recommend a tsp of simple/demerara to match the build of the Pop Quiz (essentially this same drink but with Bourbon as the spirit and mole as the bitters). Comes across as a bit hot.


I agree, this is way too hot and dry, a whopping 92 proof before ice dilution. The individual flavors are mostly lost from the astringent heat, although the rootbeer still comes through, albeit somewhat acrimoniously (I used Bittercube Rootbeer Bitters which I usually like.) Next time I will try the 1/6 oz Demerara syrup, ~90 proof rye (e.g. Bulleit) and 86 proof Laird's Apple Jack.

Not a recreation, but an update, of the rum ration given out to enlisted men in the British navy ca. 1867, as outlined in Zach Pearson's recent article on the Gimlet. The rum's volume has been bumped up to approximate the proof of navy rum, and the water cut down and partially replaced with ice. Lime cordial can be used in place of the juice and syrup.

The Gimlet

A gimlet is a small hand drill, meant (back when things were still sealed in barrels) to drill a hole in a barrel and let whatever was put inside out. A gimlet pierces things, and so people with a sharp gaze were “gimlet-eyed”. A Gimlet also pierces. Made from gin and lime, it’s meant to be a short, sharp drink tossed down the hatch, but modern, craft oriented bartenders take one look at the neon-green, corn syrup filled Rose’s lime juice that’s supposed to go into the drink and think about either making their own lime cordial or simply substituting fresh lime juice and sugar. And I don’t think they’re wrong.

Heart of Darkness

1 oz Virgin Islands Rum, Cruzan Blackstrap
3⁄4 oz Lime juice
2 oz Chinotto, San Pellegrino
1 spg Mint (as garnish)
Instructions

Shake, strain into a mason jar over fresh ice, top with chinotto, garnish with mint and two blackberries.
