2 oz Pisco, Campo de Encanto
1 oz Lime juice
3⁄4 oz Limoncello
1⁄2 oz Cognac, Louis Royer VSOP Force 53
1⁄2 oz Egg white
3 ds Bitters, Bitter Truth Creole
Instructions

Add all ingredients but bitters to cocktail shaker and dry shake vigorously without ice. When nice and frothy, add ice, shake again to chill, and strain into a chilled cocktail coupe. Top with 3-5 drops of bitters.

Notes

This is pretty underpowered compared to the Trader Vic Dr. Funk variant - if your pilsner glass is 16 oz, it's probably very weak.

Bartender's Guide by Trader Vic (1947) contains the following recipe:

Dr. Funk
2.5 ounces dark Jamaica or Martinique Rum
1 lime
.5 oz lemon juice
.25 oz grenadine
.25 oz Pernod or Herbsaint
1/4 tsp sugar

Shake, add lime shells, top with soda, garnish with fruit or geranium leaf.

The pear flavor in this cocktail is intense; the st. germain and eau de vie definitely amplify each other. The rye is very much in the background. I used clear creek pear brandy and rittenhouse rye. If I were to try again I'd halve the st. germain and eau de vie and maybe try adding a little punt e mes if the drink seemed incomplete.
