Combine, stir with ice, strain into absinthe-rinsed chilled glass.
The parental original "West of Lyons" calls for bourbon (but I prefer rye in this; the spicier, the better) as well as Kina L'Avion D'Or. Subbed sweet/bitter vermouth to accommodate my omission of gum syrup. Also replaced vanilla with cedar notes in outstanding bitters from Vancouver.
A home version attempt at the lovely "West of Lyons" by the brilliant crew at Sessions at the Presidio (SF), but named instead for Truffaut's 1976 gem filmed in Thiers, Puy-de-Dôme. Sounds like Game Set Match.
- Windsor Knot — Cognac, Rye, Dry vermouth, Cynar, Bénédictine, Orange peel
- Little Italy — Rye, Sweet vermouth, Cynar, Maraschino cherry
- Shadow Dreaming — Bourbon, Sweet vermouth, Zucca, Rum, Bitters
- Choke Me Like You Love Me — Rye, Cynar, Pedro Ximénez Sherry, Absinthe
- Side Eye — Bourbon, Sweet vermouth, Cynar, Amaro, Bitters, Lemon peel
Wonderful cocktail. Much more complex derivative of a Manhattan. Used Cherry Bark Vanilla bitters from Bittercube.
