When we had a lot of arrack and overproof rum sitting in our inventory, we came up with this approachable Captain’s Blood variation as a way of introducing these fearsome spirits to our guests.

The Last Rasta

3⁄4 oz Lime juice
3⁄4 oz Herbal liqueur, Green Chartreuse
1 twst Lime peel
Instructions

Shake, Strain, Up, Twist. Use a fun glass and listen to Horace Andy while preparing.

Notes

My variations have included subbing the falernum with allspice dram but it was too sweet. Also, it just doesn't work without the lime, but feel free to try other rums... The Appleton was a later addition; it adds depth and funk, but any anejo rum should work.

History

This started as a Jamaican inspired version of "The Last Word" but no matter how hard I tried I couldn't strip it down to 4 equal parts. I guess that Jah provides the Rastaman with that extra ingredient...

  • Maybe a touch too sweet but still very tasty. — ★★★★
  • Not so aggressive as you might think. Brings out a salty note in the Chartreuse.

Oh Giffard Creme de Banana... how can you smell so good and taste like nothing in a drink unless in egregious amounts.

I make many cocktails that use small amounts of Giffard du Bresil and the flavor comes out strong. The Elusive Dreams and Fay Wray cocktails, for example, call for .5 oz each. It's very present in each of those.

Good drink, although Creme de Banana felt a bit overpowering at these specs and I wanted more of the Sibilla which worked so, so well. I adjusted to 2.25oz Manzanilla sherry, .5oz CdB, .5oz banana-infused bourbon (happened to have a few oz left from another application), and .5oz Sibilla. Came out to be a fantastic low ABV sipper, thanks for the template!

  • I did a full tiny lemon, which was way too much. Probably just need half a small. I could tell this is a great drink though.
  • Simple, with cynar
  • A favorite. I love the way the lemon comes through; less bitter than the search for delicious and I think a bit more compelling

So... this drink. I think that this was the original. It inspired Kirk Estopinal at Cure in New Orleans to come up with the Search for Delicious, which was featured in Beta Cocktails. I would guess that (as Misty Kalkofen put it) a "game of telephone" ensued and thus the Little Giuseppe. All three are significant. Thanks, Zachary

yarm commented on 10/18/2022:

It's listed as 2009 in The Bartender's Manifesto book which is simultaneous with Misty's Little Giuseppe.

So delicious and well balanced! I like to add an ounce of gin to proof it up.

yarm commented on 1/27/2023:

For the longest time, I thought this and the Little Giuseppe were a jab at Giuseppe Gonzalez but Stephen Cole attributes the name to a chef friend of his with the genesis story involving, "One night an Italian chef I knew came into the bar for a drink. I thought he'd like a Cynar Manhattan."

Devil Inside

1 1⁄2 oz Rye, Rittenhouse 100
2 ds Absinthe, Vieux Pontarlier Verte
1 twst Lemon peel (as garnish)
Instructions

Rinse a rocks glass with Laphroaig and dump. Stir the remaining ingredients (except the lemon twist) with ice, then strain into a rocks glass. Squeeze the lemon twist over the drink and discard. No garnish.

Notes

Original recipe called for 1/2 oz Bruichladdich Port Charlotte 7-Year Scotch. I made it with the Laphroaig 10 (also rinsed with it, per the original recipe) and it was fantastic.

Coconut Revolution

1 1⁄2 oz Rye, Rittenhouse 100
1⁄2 oz Cynar 70
1⁄2 oz Coconut liqueur, Kalani
1⁄2 oz Sweet vermouth, Carpano Punt e Mes (coffee infused)
1 twst Orange peel
Instructions

Stir, strain into old fashioned glass with a large cube or sphere. Garnish with an orange swath.

Notes

For the coffee infused Punt e Mes, infuse 8 oz of vermouth with 1 oz of whole espresso beans for 24+ hours. Alternately build with standard Punt e Mes and add coffee beans when stirring (haven't tried this but I'd guess 10 or so beans with a 50 revolution stir count would be fine).

  • Enjoyed this cocktail. Nice for after dinner - I used about a dozen coffee beans and let everything sit for about 10 minutes before adding adding ice and shaking. Good coffee flavor. Also garnished with beans.
