1 1⁄2 oz Brandy, Courvoisier VS
1⁄2 oz Dry plum brandy
3⁄4 oz Lemon juice
1⁄4 oz Rhubarb liqueur (Giffard)
1⁄4 oz Vanilla syrup (2:1)
1⁄4 oz Ginger syrup (2:1)
1 pn Nutmeg (freshly grated)
Instructions

Shake all ingredients bar the nutmeg with ice and strain into a chilled Nick & Nora glass. Grate the nutmeg over the top of the drink.

Instructions

Shake all ingredients with ice and strain into a chilled V-martini glass. Spear the pear slice with a cocktail pick, mist it with mezcal (if available), then garnish.

Notes

While I like an unaged agricole in this, it's a real crowd pleaser when made with a more neutral rum like Flor de Cana 4. Basically any 'white' rum will work however.

The bitters I used originally were homemade spiced pineapple ones, with a strong cinnamon and anise note behind the pineapple. Ideally don't use anything that will change the colour of the drink too dramatically.

History

A cross between a Piña Colada and Chris Jepson's London Calling, named for the Warren Zevon song in which the narrator states he saw 'a werewolf drinking a Piña Colada at Trader Vic's, and his hair was perfect'.

I actually named this drink the singular 'Werewolf of London' but a cocktail by this name already exists in Kindred's Database. Gotta say, while I think mine fits the name better, the other is a tasty libation.

Ándale

1 1⁄2 oz Blanco tequila
3⁄4 oz Pineapple juice
3⁄4 oz Lime juice
1⁄2 oz Ginger syrup (2:1)
1 ds Coriander bitters
3 dr chili tincture

Instructions

Gently pour the soda water into a chilled tumbler containing one large cube of ice. Shake the remaining ingredients with ice and strain into the glass. Grate the cinnamon stick over the top of the drink and place into the glass.

Notes

Ginger syrup made by blending 2 parts ginger juice and 1 part superfine sugar (by weight) until dissolved.

Dry shake all but rose water, then shake with ice and strain into a chilled coupe glass. Garnish with Angostura bitters art, sesame seeds, and the rose water.

Notes

Any quality tahini should work but Baracke is runny and thus easier to measure and incorporate.

History

After discovering my love of tahini I wanted to incorporate it into a cocktail. I used caraway and rose water for their presence in Middle Eastern cooking and carrot juice and orgeat for savoury goodness. The egg white acts as a binding agent to prevent the tahini from separating.

Dead Men Float

Instructions

Whip shake all but the Fernet and coffee liqueur with a few pieces of ice, then strain into a highball glass filled with crushed ice. Float the Fernet and coffee liqueur on top and garnish with the pineapple fronds.

History

Came up with the name first, then decided it was a great opportunity to deploy my favourite shot, 50:50 Fernet:Mr Black (or what I call a Mr Branca™). Skewing the float towards Fernet works better in terms of aromatics and cutting through the drink towards the end.

History

While writing up Matty Gees' Sands from Milk & Honey on the blog which was a Casino Cocktail with the addition of grapefruit and no orange bitters or perhaps the Savoy Cocktail Book simplified Aviation with grapefruit, I became inspired. What if I took the Sands and crossed it with the classic 1916 Aviation? Sand in the air made me think of a sandstorm which in turn made me think of Darudes's 2000 hit song as the name. Overall, the grapefruit juice works here with the Maraschino to push the combination a half or even a full step away from the Aviation.

Measure by weight. Stir to integrate. Bottle, date, and label. Can be stored room temperature. For single serving, use a syrup cheater.

What's a "syrup cheater"? Just adding sugar to the acid blend instead of assembling separate ingredients?


"Cheater bottles" are bottles used for storing and pouring syrups, juices, and batches behind a bar. I copied the instructions for the Champagne acid from my bartenders' guide, and included my note for them that they can keep the acid blend in a cheater bottle the way they do syrups and juices. There is no added sugar in this case.
