The Setting Sun

2 oz Junmai Sake (pref Ozeki Nigori)
3⁄4 oz Lemon juice
1 bsp Grenadine
Instructions

Add all but grenadine to shaker with cracked ice. Shake vigorously and double strain into a coupe. Pour grenadine over back of barspoon to create layered effect at bottom of glass.

Notes

Homemade grenadine strongly encouraged over the bottled kind.

History

Exploring atypical combinations and found junmai sake and mezcal to make a great pairing. Perfect for riding off into a sunset at the end of a long day.

History

I was thinking about the Banana Toronto that I had at Offsuit here in Boston, and I wondered what the addition of banana liqueur would be like in one of my favorite Fernet Branca drinks – the Hanky Panky. Therefore, I decided to act on that curiosity and make one. I dubbed it after a synonym for the Hanky Panky, namely Monkey Business (despite there being a Painkiller-like drink of that name already).

Instructions

Muddle the dragonfruit in the shaker, then add remaining ingredients, shake vigorously using ice cubes, then pour into a frozen coupe glass.

Notes

The "problem" with dragonfruit is that the juice cannot be muddled out, it remains a juicy/pulpy consistency. So I don't "strain" the shaken cocktail into the glass, rather, I "encourage" the muddled dragonfruit into the glass to keep it's flavor. Thus can the actual fruit be tasted, and the seeds, which are edible, act as something of a garnish.

Made with Kammer Kirsch and Leopold Bros Maraschino, with a pitted sour cherry I had just picked in the yard. Very good stuff. I don't mind the dryness but I'd add at least a splash of simple next time for a slight bit of balance. Lovers of cherry flavors will like this.

EDIT: Couple months later made this as a frozen drink after getting a Vitamix. Added a good bit of simple (didn't measure) and it was good, but still needed additional sugar more than the regular cocktail needed any sugar. Either way, having fruit juice and simple means it blends very well into a frozen cocktail.


Whisky in Church

3⁄4 oz Oloroso sherry
1 bsp Maple syrup
6 ds Cherry Bitters (or use 1 bsp of Cherry Heering)
Instructions

Stir, strain to lowball with big ice. Garnish with lemon zest.
