Super tasty used Laphroaig CS and 1/2 oz LULI Chinato which is a semi dry white chinato I believe and 1/4 oz vermouth di torino and it was gorgeous excited to try with more traditional chinatos as well!

1 3⁄4 oz Rhum Agricole (Bielle brut de fût 2012)
3⁄4 oz Amer Picon
1⁄3 oz Champagne (Champagne syrup)

Instructions

Stir, strain, coupe

Notes

Use a high proof and aged agricole rum.

Champagne syrup: 1 part sugar, 1part champagne, water bath for dilution. Ready...

Danish Trinity

1 1⁄2 oz Aquavit, Aalborg (Keep in freezer at least 6 hours before.)
1⁄4 oz Gammel Dansk
Instructions

In a chilled cocktail glass, layer ingredients in order given. Garnish with three caraway seed on an orange peel.

Notes

Thick mouthfeel, caraway up front, sweet cherry-cocoa-herbal middle, smooth gentian anise finish. Gammel Dansk may be substituted by may be achieved by mixing half Bruto Americano and half Boonekamp/Underberg.

History

Based on the Danish Pentecost, this drink was made possible by the acquisition of Gammel Dansk.

Shake, strain, coupe, add foam.

Notes

Foam: Tonka and gentiane. In shaker add 1 egg white, 1/3 lime juice, 1/4 simple, 1/3 suze, grated tonka. Put a spring in shaker, and shake. Check foam and pour.

Solid 3. I made with Cocchi Doppo di Teatro, which is a little sweeter than Punt a Mes and probably should have put a barspoon of zucca or something else to match bitterness. Definitely worth a try.


Missing Notes

1 wdg Lime (to rim glass)
1 pn Cardamom (to rim glass)
1 oz Ancho Reyes chile liqueur (Verde)
1 oz Zucca
1 ds Bitters, Bittercube (Jamaican #1)
Instructions

Coat rim of martini or coupe glass with lime and cardamom powder. Stir bourbon, liqueur, zucca, and bitters with ice. Pour into glass. No garnish.

History

Variation of Chili Willy from Charmant Hotel in La Crosse, Wisconsin. We took notes at the bar, but they vanished. So, we created a similar cocktail from memory.
