1 oz Yuzu juice
1 oz Pineapple juice (Caramelized)
3 ds Passion fruit bitters
Instructions

Shake, strain, double rocks, crushed ice. Garnish with a pineapple leaf and wedge.

Stir, strain over one big rock, garnish with a floated lime wheel.

You can substitute a half ounce of a homemade lime cordial or sherbet for the lime juice and simple.

  • This was surprisingly delicious. It's light - the botanicals and spiciness come out of the gin and cocchi americano nicely. I aded some fresh rosemary to finish it off to kick up the aromatics a little.

The original recipe, printed in Newman's book American Bar in 1900, called for grenadine, but an amendment in 1904 changed that to Maraschino liqueur.

  • Citrus and rosemary is a great combo. The rosemary is more subtle than than the name implies. Maybe I should make a stronger syrup?

Great drink. Would be 4 stars for me, I think, by omitting the ango. With the cynar, aperol, and botanicals, I don’t think the drink needs the bitters; and they might overtake those other flavors in the drink.

Pretty good balance between bitter, sweet and sour. I feel like the Pimm's is a bit lost though, could easily be a 4 with a bit of tinkering
