Good idea, Leslie, and a perfect project for one with the skills of a man such as yourself. May I suggest grenadine, or another bloody colorant, for your Tell-Tale Hart? Suggestions for the series: Arthur Gordon Pimm's, Morella (with kirsch or Maraschino), Kingdom by the Sea (King's Ginger, maritime Scotch).

Nice cocktail with complex flavors. The source reference doesn't specify the Irish whiskey. Is Redbreast the actual original call, or was this the KC member's preferred choice? I made this with Martini & Rossi Ambrato since Noilly Prat Ambre doesn't appear to be available in the U.S. at this time...on my wishlist for for my next import buy.
Muddle kumquats in liqueur. Stir to combine and fine strain over packed ice in a julep cup, topping with Champagne, more ice, and a slapped mint sprig. Serve with straw.
A recent episode of Inside Amy Schumer mentioned an elderflower and kumquat julep, and I thought that sounded tasty.
First: Prepare Lime Foam. Then: shake all but lime foam with ice, strain into a cocktail glass. Top liberally with lime foam.
To make lime foam: blend 3 oz lime juice, 1 oz of agave (or honey) syrup, 0.2g of lecithin and 0.3g of xanthan gum. Put this in a whipper, charge, shake & dispense on top of the cocktail.

Dry shake, shake, strain, up, garnish with grated orange zest or orange flower water.
First: Prepare Orange Foam. Then: shake all but orange foam with ice, strain into a sugar-rimmed coupe or cocktail glass. Top with orange foam.
To make orange foam: blend 200 ml orange juice, 1 oz of agave syrup, 2 dashes of orange bitters, 0.5g of lecithin and 0.5g of xanthan gum. Put this in a whipper, charge, shake & dispense on top of the cocktail.
