Sub 1/4 to 1/4 of the cognac for Rittenhouse Rye for a nice variation.

  • Can also substitute Brandy (Korbel) for the Cognac I may also try reducing the Orgeat a tad as others have commented.
  • This is very good, perhaps a bit sweet. Will decrease orgeat to .75 probably on next one. Peychauds does some nice work here. UPDATE: .75 Orgeat is perfect! — ★★★★★

  • kind of shocking how well spanish brandy works with the other ingredients; my only complaint is it's such easy drinking that the whole thing basically tastes like a complex vermouth

I had no spanish Brandy on hand, and tried with Cognac.

I confirm what Mahastew already specified: Does not work with Cognac.  Too sweet. You are warned...

This is an excellent, well-balanced cocktail. Lots of flavor, but not overwhelming, a successful Spanish brandy riff on the Boulevardier. As per the recipe I used Cardenal Mendoza, Gran Classico, Punt e Mes, and my own bottling of Abbott's Bitters based on Darcy O'Neil's painstakingly researched resurrection of the original. All components work together in this cocktail, with the fennel/anise of the Abbott's being noticeable in the aroma. [In response to the question about bitters, try Darcy's recipe for the Abbotts, it is really good and different.]

New Spain

3⁄4 oz Lime juice
1⁄2 oz Agave syrup
1 sli Ginger (1/2-inch thick)
1 sli Lime
1 pn Nutmeg
Instructions

Muddle lime juice, agave and ginger. Add sherry and mezcal. Shake. Strain over large ice cube. Garnish with nutmeg and lime.

  • Went easy with the ginger after reading comments but will try again with the full amount as I found it fine. More of a summer drink than late November. Livened up with a dash of mole bitters

Stir with ice until well chilled and strain into a very cold glass

Notes

A twist on the Martini adding Maraschino sweetens but also gives a 2:1 Martini an interesting flavour. You can go to 0.5oz of the Maraschino but personally I find that a little too sweet

History

Made this one up in France, where Lillet is cheap and plentiful! There must be a recipe using these ingredients out there but I am yet to find it!

Following the comments, I think 1/4 oz agave was not quite enough although still a good drink, but 1/3 oz agave made it very accessible. A great mezcal forward drink.
