Peanut Colada

1 oz Armagnac
1 1⁄3 oz Peanut milk (see note)
1⁄3 oz Lime juice
1⁄2 sli Pineapple (0.5 to 1 inch)
1 pn Salt
Instructions

Blend all with 4 ice cubes. Pour in glass.

I 've strained the mix before serving.
And served it on rocks.

Notes

Peanut milk: blend 30 grams unsalted peanuts+ 3 1/5 oz water. Fine strain. Blend again with 5 tea spoons sugar.

History

The syndicat cocktail bar published a lot of recipes on instagram during quarantine. They tend to use a lot of waters/ milks, made by blending one ingredient with water. i thought it was a great idea for highballs and low abv drinks.

They only use french spirits and liqueurs.

My mashup of Milk & Honey's Left and Right Hand cocktails by combining the Bourbon and rum, respectively, in the Negroni/Boulevardier format with mole bitters.

Notes

I haven't tried this, but if you don't have the Luxardo Sour Cherry Gin, you could probably try muddling a cherry with a lighter New Western style gin (the Luxardo is only 76 proof).

Notes

This is definitely for those who like (really like) the earthy bitterness of Suze. If you want something a bit less intense, do 1 oz pamplemousse and .5 oz Suze.

If you don't have Malfy con Limone, use a low proof, citrusy gin such as Plymouth, Aviation, etc.

Notes

Cacao Nib Infused Mezcal: toast 1/2 cup of cacao nibs on a baking sheet at 350 for 6-7 minutes. Let cool, and then infuse in a 750ml bottle of mezcal (I used Sombra) for 3 days. Filter, strain and re-bottle.

History

Read somewhere that walnuts are sometimes used in mole sauce, so I wanted to work similar flavors into a cocktail.
