Elske Sour #2

2 oz Gin, City of London
3⁄4 oz Sake, Nigori
3⁄4 oz Simple syrup (Umeboshi, see note)
3⁄4 oz Lemon juice
1 pn Yeast (Toasted bakers yeast)
Instructions

Build in a shaker, add pinch of toasted yeast, shake well and double strain.

Notes

To make the Umeboshi syrup, Blend 6 umeboshi into simple syrup then fine strain.

History

Similar to a plum/ginger sour but I love the added umami and saltiness of the umeboshi and yeast.

  • Love it. It's almost yogurty.
  • Had this at Elske and *loved* it. Made it at home and it was less good but still excellent. Put 3 umeboshi into 4oz of simple. Would do more ume next time. Ume garnish is good.

I'm super excited about replicating this but I think I'm missing a volume for syrup in the umeboshi syrup. I'm assuming that don't want six umeboshi into ¾oz of syrup but maybe I'm being unimaginative.


Banana Farmer

1 oz Navy strength rum, Smith & Cross
1 oz Light rum, Plantation 3 Star
1 oz Crème de Banane, Giffard (giffard ideally)
3⁄4 oz Lime juice
3⁄4 oz Pineapple juice
Instructions

Combine everything with ice and shake. Strain into an appropriate tiki mug or pearl diver glass filled with crushed ice. Probably needs a garnish, but I haven't found something yet. Maybe a slice of frozen banana?

3 dr Bitters (Garnish - Coastal Root Pine Bitters)
Instructions

Dry shake ingredients, shake with ice, double strain into coupe. Garnish with 3 drops of Pine Bitters. Enjoy!

Notes

Aviation gin also plays well with this cocktail. The pine syrup is a star here, and the bitters are a must.

I haven't toyed with CC EDV Douglas Fir....yet.  The bitters and simple are just awesome.  I highly recommend them both if you haven't tried them.  No sweetness is needed.  It's been described by many as a "dessert cocktail" or "grapefruit creamsicle".  Extremely popular and sought after.


Love & Chocolate

1 1⁄4 oz Gin, Junipero
3⁄4 oz Luxardo Bitter Bianco
1⁄4 oz Crème de Cacao, Giffard (Blanc)
Instructions

Stir, strain into old fashioned glass with a large cube or sphere. Garnish with a few spritzes of crème de violette from an atomizer.

Instructions

Stir, strain into an old fashioned glass with a large cube or sphere. Garnish with either a large orange swatch, pineapple fronds or a dehydrated pineapple ring.

Notes

For the pineapple infused gin, combine a roughly chopped ripe pineapple with a 750ml bottle of Beefeater either for (a) 24-48 hours in a non-reactive container, or (b) 2 hours at 135 degrees via sous vide. Also works well with Plantation Stiggin's Fancy Pineapple Rum.

Wanted to try again my own recipe today. But had no citrus, nor white choc' liqueur and boler's at home:
Chartreuse verte, 2 dashes bittermen's orange cream citrate bitter, 2 dashes torrefied cocoa nib tincture, and 1 dash cheseapeek bay bitters from bitter end. Grappa is pushed front by the ingredients. Lovely...

Notes

Red kampot pepper is damn hot and very aromatic.
Combination of orgeat, cynar, absinthe give a very appealing taste.
A bit sweet.

The drink tasted very different all along the test.

Maybe serving on rocks will keep temperature more stable and taste too
