3⁄4 oz Herbal liqueur, Green Chartreuse
3⁄4 oz Lime juice
1⁄2 oz Cane syrup
1 pn Salt
5 lf Mint
Instructions

Add ingredients in a shaker
Add 5 kold draft cubes and shake
Double Strain into a coupe, garnish with mint leaf

  • Closer to 4.5. I personally don't get heavy daiquiri vibes, but still tasty
  • IMHO, an excellent daiquiri is a rare perfect cocktail. This doesn't improve on it, but it takes it in an interesting direction.

History

Los Altos (the highlands) is a tequila-producing region of Mexico. Modeled after the Black Manhattan, which substitutes an amaro for a modifier.

  • Zucca is a bit off, but eliminating it made it too bright. Replace with a different dark bitter - Averna or Balzam?
  • I would use full 1 oz of lime next time. amaros end up a bit muddled - might experiment with using abano and aperol with rhubarb bitters in place of the Rabarbaro. Or orange bitters in place of aperol.

Spanish Harlem (bourbon)

1⁄4 oz Cherry juice (Juice from jar of maraschino cherries)

Instructions

Fill cocktail shaker with ice. Add bourbon, then bitters, sherry and cherry juice. Stir vigorously. Strain into martini glass and garnish.

Possibly my favorite cocktail. A well-aged rum is essential; others work, Appleton Estate 12, there's an El Dorado 12 I've found that works well too. Last time I was at Hop Sing I think they were using a Gosling Family reserve.

Finding nice grapes and juicing them is the only real reason I don't make this all the time.


Aromatic Smash

1 2⁄3 oz Light rum, Bacardi
2⁄3 oz Lemon juice
2⁄3 oz Simple syrup (Thyme infused)
4 lf Thyme
1 sli Ginger
Instructions

Muddle a few leaves of fresh thyme and a roughly chopped up slice of ginger in a glass, add all other ingredients and shake over ice.

Double strain into a chilled coupe and garnish with some fresh thyme leaves.

Notes

Make the thyme infused simple syrup by mixing up a batch of 1:1 sugar:water at room temperature with five or six large sprigs of thyme in the mixture (fresher the better). After a few hours the sugar and water will have combined (without the need to heat it) and become infused with the flavour of the thyme. Remove stems and any leaves that have broken off, bottle and refrigerate.
