The Sandcastle

1 oz Watermelon juice (Simply Watermelon)
1 oz Rum, Diplomatico (Reserva Exclusivs)
1 oz Martinique Rum, Clément
3⁄4 oz Lime juice
1⁄2 oz Pisco, Macchu pisco
Instructions

Fill double old fashioned glass with crushed ice. Add all ingredients to shaker. Shake and strain.

Notes

The only thing that can’t be switched in this is the watermelon juice.

Friend bet me I couldn’t make a good cocktail with watermelon juice. This is what I came up with.

Neptune's Wrath

1 1⁄2 oz Gin
3⁄4 oz Lemon juice
3⁄4 oz Simple syrup
1⁄4 oz Absinthe
1⁄4 oz Herbal liqueur, Green Chartreuse
Instructions

Shake gin, lemon juice, simply syrup, absinthe, and egg white for one dry shake then shake again with ice. Double strain into sour (ideal) or coup glass. Light chartreuse on fire then pour into drink to finish. No garnish

2 oz Light rum, Probitas
1⁄2 oz Pineapple syrup
1⁄4 oz Passion fruit syrup
2 ds Blackstrap Bitters
1 sli Lime (garnish)
Instructions

Shake all ingredients with ice for 15 seconds, strain into a chilled coupe. Garnish with a lime wheel.

Notes

Pineapple syrup: equal parts fresh pineapple juice + cane sugar. Passion fruit syrup: equal parts defrosted Goya passion fruit pulp + cane sugar.

Instructions

Stir with ice in mixing glass, serve in rock glass with one huge ice cube. Garnish with a big fresh sage leaf.

Notes

Longueteau 62 % despite the abv is not that hot.
Alcohol is very well integrared.
The cane is not that obvious compared with other white agricoles.
You get a lot of minerality and grass.

Shake long strain, coupe. Serve.

Notes

Paranubes is made of cane juice. Subsitute white agricole rum.

Oleo: lemon, lime, orange, grapefruit peel+ sugar. Overnight. A bit of water.
Falernum: Mine is like an orgeat in texture. Blend ginger, cloves, allspice, nutmeg, lime peels, almonds, with rum, sugar, water. Let steep a week or two.

Surprisingly good, but I made an unintended modification (perhaps subconsciously), using 1/2 oz of simple syrup rather than the called for 1/4. I had feared that Salers known drying effect would be too much with the 3/4 ounce of lemon, since the Dimmi is balanced between sweet and bitter. The inadvertent use of 1/2 oz simple syrup resulted in a very balanced drink, with the floral (apricot and citrus blossom) of the Dimmi, some gentiane/wormwood bitterness. The flavor/aroma are reminiscent of Aveze in some ways.


The Biggest, Blackest Pineapple

2 1⁄2 oz Pineapple rum, Plantation Stiggins' Fancy
2 oz Amaro Sibilla
1 oz Cynar 70
1 1⁄2 oz Pineapple syrup
1 1⁄2 oz Water
1 oz Lime juice (reserved)
2 rinse Bitters, Angostura (as rinse)
Instructions

Set up a pourover (like a V60). On a fine grind setting, grind 15 grams of relatively neutral coffee and place in the filter. Combine the first four ingredients in a small pitcher. Add 1.5 oz water to wet the grounds. Slowly pour the cocktail through the coffee into the carafe below. Transfer to a jar and refrigerate. When you're ready to make the drink, add the lime juice to the jar. Chill two coupes with ice and dash some bitters on top. Swirl to coat and discard. Add the cocktail evenly between the coupes.
