Instructions

Stir and strain over one big rock. Garnish with Orange zest.

Notes

I have used the exact recipe as well as swapping out the Mezcal, amaro and sweet vermouth for other brands, and the formula worked very well on all counts.

A very nice mezcal cocktail. The moderate ancho heat blends harmoniously into the mezcal, mellowing the earthy/smokiness of the latter. The CioCiaro blends smoothly while broadening the flavor profile. The volume is to the small side, increasing to 1.5: 3/4: 3/4: 3/8 would make for a standard fill.




Polynesian Remedy

1 3⁄4 oz Dark rum (Plantation original dark)
1⁄2 oz Ginger syrup
1⁄2 oz Orgeat
1⁄2 oz Honey syrup
4 ds Islay Scotch (Peated...)
Instructions

Shake, strain, old fashioned glass with ice.
Garnish with candied ginger, lemon wheel and pineapple leaf.

Notes

Very nice drink and interaction of orgeat and ginger.
A bit sweet according to me BUT:

I do not have a proper dark rum...
Tried several times the recipe (5 times at least), once with el Dorado 15 and another with a high proof Guatemalan (Botran) rum bottled by a french retailer.
Tried with laprhroig and lagavulin 16.
And lemon and lime.
Also changing Honey for brown sugar rich simple.

Version with El Dorado, lime, brown sugar and Lagavulin appears to me to be much better.

I also used a homemade ginger liqueur instead of ginger syrup.

10 oz vodka+ 5 oz chopped candied ginger.
10 days infusion.

Maybe my rums were too sweet.
Rum could easily be uped to 2 oz or 2 1/4 and/or using a higher proof dark rum.
Shaking time could be also longer or better use crushed ice in the glass instead of cubes...

New York Stone Sour

2 oz Bourbon
1⁄2 oz Lemon juice
1⁄4 oz Orange juice
1 t Sugar
1⁄2 oz Red wine (as float)
Instructions

Dissolve sugar in juices, add whiskey and shake. Strain into a coupe and float wine.

Notes

Other kinds of whiskey also work here, and actually the Washington Post has cognac as the base.

History

Reiner's twist on the 19th-century New York Sour is the addition of orange juice which David Wondrich says
"makes the drink."

Instructions

Rub mint into the old fashioned glass and discard. Stir ingredients with ice in the glass. Serve.

Notes

Black cardamom syrup:
Muddle 2 oz cardamom pods, add 7 oz water in pan. Let boil 10 minutes to reduce.
Strain. Add half part agave syrup to remaining water.

Made this with Monkey Shoulder, Dolin Dry, St. George Coffee Liqueur & 16 drops Bittermens Xocolatl Mole bitters.  Nicely integrated and balanced, with no ingredient forcing itself to the front.  The St. George Coffee Liqueur is pretty dry by coffee liqueur standards, might try a blanc / bianco vermouth next time to add a touch more roundness and richness.  I would suggest a light stir count (maybe 30-40 revolutions); using a standard stir count (50-60) made for a slightly thin drink.

Instructions

Shake all ingredients with ice for 15 seconds, strain into coupe. Garnish with expressed lemon swath.

History

Had a nearly full bottle of Pineau and trying to using it up while hunkered down during the coronavirus lockdown. Part of my "Cocktails from the Corona Bunker" series. :-)

What are the odds that I would have Pineau AND China-China at the same time, not to mention Benedictine. This is amazing! It's like a Long Island Ice Tea for cocktail nerds. Complex, yet easy to drink and not get lost in any one flavor.
