2 1⁄2 oz Gin
1⁄2 oz Sweet vermouth, Cocchi Vermouth di Torino
1⁄2 oz Bianco Vermouth, Carpano Bianco
1 bsp Maraschino Liqueur, Luxardo
1 rinse Absinthe
1 twst Lemon zest
Instructions

Stir all but zest with ice; stir; strain into coupe; garnish with lemon.

Notes

Rewritten after I realised I'd made a complete hash of the proportions. As written now it's as I intended it. Improved, you might say.

History

The concept - an improved, perfect Martini - was quickly followed by the name. Put an olive in as well, if you really want to get carried away.

  • Opted for the olive. Lovely clear light gold. Balance is quite nice: Piny-ness and bite of the gin is quite tamed, but other ingredients agree to be quiet together, and sweetness seems right.

Ambery Cocktail

1 1⁄2 oz Añejo rum (Ron Del Barrilito 3-Star Rum)
1 oz Sherry, Lustau Dry Amontillado
1⁄2 oz Cognac, Hine (H by Hine)
1 t Apricot liqueur, Rothman & Winter
1 ds Bitters, Angostura
1 twst Lemon peel (expressed and discarded)
Instructions

Stir with ice, strain into a chilled cocktail glass. Express a lemon peel over the drink and discard peel.

Very nice! The punch of the ginger pairs well with Larceny bourbon here, making for a full flavored Tiki sour without rum. I used Lustau Oloroso, and while the darker sherry notes are subtle due to the small quantity, they do add positively to the body.

3⁄8 oz Aperol
3⁄8 oz Campari
3⁄4 oz Lemon juice

Port Berries Sour

2 oz Light rum (Infused with tonka bean and coconut)
3⁄4 oz Lime juice
1⁄3 oz Ruby Port
1⁄3 oz Simple syrup (Cherry, pomegranate, cranberry)
Instructions

Shake, strain, coupe

Garnish with Fat triangle shaped rim of toasted and sweetened shredded Coconut and grated tonka on the same part

Notes

I did not get info about the "berries"syrup.
Felt it was tart and round at the same time.

for the infusion :
5oz rum+ 5 oz Coconut powder/ shredded+ 2 tonka bean for 2 weeks.

I always prefer strong infusion to temper with more rum if needed
