Did not taste balanced to me as written. Maybe my lime was particularly bitter, but it overwhelmed the drink in a not-pleasant, pith-tasting kind of way. I ended up amending with more Heering and a tiny amount of Simple to make it palatable to me.

Shawn C commented on 6/11/2023:

Excellent, but I slightly altered the recipe as I have learned that the equal parts drinks with lime or lemon are often too tart, particularly when they are at their coldest. I used 1/2+ ounce of lime as I thought that would be about right against the Cherry Heering. For me the Zucca is the right way to go here vs. Sfumato, as Zucca provides a gentler smokiness. The result was a savory mesquite BBQ flavor and nose. I was amazed by the transformation of this much Cherry Heering into a completely different essence. [Others wanting a drier or more assertive drink should try the called 3/4 oz of lime, and/or Sfumato.)

  • No allspice dram but still good — ★★★★
  • Made with Old Granddad bonded, and (rather randomly) a dash each of celery and Peychauds bitters. The curacao is the loudest ingredient. Amaro-like bittersweetness on the tail end.
  • Boozy, spicy, punch-like. Allspice adds nuance without taking over. Adding this one to my Christmas cocktail list.
  • Use triple sec

We didn't have 5 x 5 aromatic bitters, so, in a choice between celery & fennel, we chose fennel. The drink is delicious.

  • This has become one of my favorite martini variations, and I make it at home frequently. Especially good with St. George Botanivore Gin. Currently using Bad Dog Bloody Mary Bitters for the celery. — ★★★★★
  • Intriguing drink. I rarely enjoy celery bitters, so I muddled ~1.5" inches celery, + some leaves. Really good! Next time I'd use more celery, & a scant pour of Montenegro. Garnish w/ thin celery stick, tapered so it can spiral like a ribbon at the top! — ★★★★★
  • Muddled half an inch of celery instead of the celery bitters and it gave it a wonderful freshness and strong celery. This is a very good drink made that way.
  • Used Hendricks. Might be worth trying a lighter gin.
  • Made with Prairie gin and rhubarb bitters. Very good! — ★★★★★

Celery notes dominate. A challenging combination of orange, celery, sweet, and a bit of juniper.

Artur B commented on 1/26/2024:

Ramazzotti, no bitters - good.
Ramazzotti, fresh celery (muddle) - very good.
Amaro Santoni, fresh celery - exellent! Rhubarb is good here.
Lillet Blanc. Amaro Santoni, fresh celery, 1 ds Angostura - still exellent!
