The Persimmon

1⁄2 Persimmon (wash and cut into large chunks, remove greens)
1 1⁄2 oz Cognac (I used Masion Rouge, but any will do)
1⁄2 oz Triple sec, Cointreau
1⁄2 oz Gran Classico
3⁄4 oz Lemon juice
1 spl Simple syrup (1:1)
Instructions

Muddle the persimmon chunks, add the rest of ingredients with ice and shake, double-strain into glass without ice. No garnish.

Instructions

Combine first five ingredients in shaker tin, add ice, shake. Strain into double old fashioned glass, add fresh ice. Top with one ounce of soda water. Garnish by generously grating a fresh cinnamon stick over drink.

  • Left out the soda water for more of a sour. Would make a great holiday drink.
  • Made w/ fresh pomegranate juice and subbed lemon for lime. Incredibly approachable with both bourbon and cinnamon remarkably understated. Tastes like juice!

Quite nice and an intelligent combination. 4.5/5, but I'm going to bump it to 5 because I enjoyed it that much and it is different. Has substantial pine/spruce bitterness, but this marries well with the sweetness of the Cocchi and the less aggressive bourbon (as compared to the pepperiness of a rye which would likely be too much when paired with the others.)
