Daiquiri-73

2 oz Rum, Privateer (barrel-aged for 73 days in 10 gallon Pine Barrens whiskey barrel)
3⁄4 oz Lime juice
1⁄2 oz Agave syrup (1:1 ratio)
1⁄4 oz Honey syrup (1:1 ratio)
1 sli Lime (Wheel, as garnish)
Instructions

Combine all ingredients except the creole bitters and lime wheel to a mixing tin without ice. Dry shake to emulsify egg. Add ice to shaker and shake thoroughly. Strain into chilled martini glass. Drop a couple drops of creole bitters on foam and drag across foam. Place lime wheel on rim of glass.

Notes

Aged rum also great with tonic or in a mojito.

2 oz Kurt's Apple Pie Mead, Moonlight Meadery
1⁄2 oz Lemon juice
4 oz Prosecco
1 pn Nutmeg (Grated for garnish)
1 sli Apple, Granny Smith
Instructions

Fill a mixing glass with ice. Add mead, lemon juice, and sparkling wine. Gently stir a couple times by dragging a barspoon up the sides of the glass so you don't kill the carbonation. Strain into a Champagne Flute. Garnish with Granny Smith apple slice and grated nutmeg.

Notes

2-3 stirs is enough. Just looking to quick chill/combine all the ingredients.

Muddle berries and herbs with simple syrup. Add all other ingredients. Shake vigorously. Serve up in a coupe glass.

Notes

Even though this sounds sweet, it's actually well balanced. If too sweet for some, the simple syrup or Orange juice can be reduced by half an ounce.

Very good, though a bit sweet so I served it over ice, topped with a little club soda, and added a big sprig of mint and it was perfect for a summer afternoon . This is where the rest of my applejack will be used.

1⁄2 oz Aromatized wine, Cocchi Americano

<br /> As that ol' song goes, nice & easy does it! And this drink is definitely nice and easy. The Drambuie puts some body into the drink, and and the blended Scotch and Cocchi Americano lightens things up somewhat. The end result, along with the big ice rock in the middle, topped with orange and lemon twist oils, is a drink that is nice & easy. Definitely a late spring thru early fall drink.



Absinthe? How much? Why? I'd like to try your suggestion.

3⁄4 oz Jalapeño Syrup
Instructions

Shake/Stir/Strain with jalapeno slice garnish.

Notes

If jalapeno syrup is not available simply muddle some peppers, heat is hard to balace so add to taste.
