Bermuda Black

1⁄2 oz Ginger juice (from about 1 1/4 ounces peeled ginger root about 5 inches)
1 oz Light rum
3⁄4 oz Simple syrup
1 3⁄4 oz Stout (milk stout, or porter)
Instructions

Shake ginger juice, rums, lime juice, and simple syrup in a cocktail shaker until well chilled. Strain into a highball glass filled with ice and top with milk stout (or porter). Garnish with lime wheel and candied ginger, if desired.

Shake all but ginger beer hard for 10 seconds, strain over fresh ice in a highball glass, top with ginger beer, serve with straw.

Instructions

I thought it was so original that i needed to try despite ranking.

I made a test with 1/4 each on rock. And thought it has potential. It reminded to me some kind of a Brooklyn... Or a Swee' pea from Craig E of kindred.

I've made this, stired in OFD with ice:

1 oz aged jamaican rum,  (>60%), 1 oz knob creek rye,  (>60%), 1/4 bittermens orange citrate, 3/4 maraschino liqueur (Cartron), 1/2 orange wine, 1/3 dolin white, 2 dashes ango. Good stir.

You need strong rum and rye , and luxardo. My maraschino is a bit  too soft to counter the aroma of orange bitters.

The result is quiet good. 4 stars according to me.  You should try for sure.

I'll try this next with Plymouth gin ...the Old Tom approached my limit of sweet for this style of cocktail.  It will also be a fun one to experiment with my amari collection. Over all, this one is a contemporary classic in my book.

A bittersweet amaro like Nonino or Montenegro makes this less sweet and bit more balanced. 


Used Hayman's Old Tom Gin, which worked well with Dolin and Meletti in terms of resultant sweetness. Flavorful and engaging mix of floral (violet, juniper, saffron), baking spices (cinnamon and clove), along with some wine grape and pear. Yet it manages to balance with bitterness through the finish.

Made this with Ferrand Dry Curacao and I'm sorry to say it was not enjoyable. Sounded great but just an odd combination.
