Upgraded Grasshopper

1 1⁄4 oz Cream (mint infused, see note)
1 oz Cognac
1⁄2 oz Crème de Cacao
2 ds Bitters (mint bitters)
2 ds Chocolate bitters (or mole bitters)
2 spg Mint (as garnish)
Instructions

Shake all ingredients hard till good and frothy. Pour over an ice-filled highball glass. Garnish.

Notes

To make the mint cream, take 1/2 cup heavy cream and 1/2 cup clean mint leaves, combine, and rest in the refrigerator for 2 days. Strain through a fine mesh strainer and discard mint. This is an adult version of a classic dessert drink.

History

Unlike most "Polynesian-style" mixed drinks, the Dr. Funk is a genuine South Pacific classic. Made in Samoa around the turn of the 20th Century by Dr. Bernard Funk, physician to Robert Louis Stevenson among others, this "stiff drink of absinthe with lemonade or limeade" was a popular cooler throughout the islands. Adapted by Don the Beachcomber, Trader Vic, and others during the height of the Tiki era into a grenadine and pastis highball, the good Doctor is updated here into a drink whose bright ocean hue is sure to bring a smile to the faces of whole groups of formerly blue men.

Instructions

Add sugar cube to rocks glass and add a little water, lightly muddle and stir until dissolved. Place two wheels of lime on base of glass then add a few cubes of ice. Add rum and bitters then stir for a few seconds.

  • Used Leopold Bro’s 3 Pins Alpine instead of Benectine. Used Laws Rye. Complex and interesting with a very nice cinnamon like finish - not the burn more like the feeling.

One of those great cocktails to sip while listening to great jazz (e.g., Paul Desmond or Miles Davis). Very smooth; not mellow, just smooth. I used Rittenhouse rye (as I couldn't scrape up enough for the Old Overholt), but it worked like a charm.

I hesitated to make this drink because both Green Chartreuse and Benedictine can be overpowering ingredients. The Rittenhouse rye, however, kept both of them in check. The icing on the cake, so to speak, was the lemon zest--which is a must for this drink. I went a step further, and rubbed the rim of the glass with the lemon rind. It added a subtle but tasty layer to the other ingredients. I rated "The Wry Monk" at 4.5 (well deserved, I might add!).
