Subbing génépy for the Salers moves it sweeter and more herbal; Suze instead bumps the bitterness and yellow color. Keep soda to one ounce, to add bubbles without making a spritz out of it.

unique and unusual. Not really my thing with all the gentian. It was a bit sweet so I added a bit of Campari which made it a bit more palatable to me, although more gentian-y
