The Amargo Vallet Sour

1 1⁄2 oz Amargo-Vallet
3⁄4 oz Cognac VSOP
1⁄2 oz Egg white
Instructions

Shake with ice. Strain into rocks glass. Garnish with lemon twist and cherry if desired.

Notes

Spin off of an Amaro Sour with Amargo-Vallet. Hennessy VSOP Cognac comes in to balance it with some roundness.

Gave it a dry shake and served it up. Very tasty. I like how the woodsy bitter cherry flavor of the Amargo Vallet works with the lemon juice.


The Bittersweet Garden

1 1⁄4 oz Campari
1 oz Gin
1⁄2 oz Herbal liqueur, Green Chartreuse
1⁄4 oz Fernet Branca (rim glass)
1 twst Orange peel (flamed)
Instructions

Stir all but Fernet Branca on ice. Strain into chilled coupe rimmed with Fernet Branca (leaving excess). Garnish flamed orange twist.

  • Left out maple. Might be worth trying with Balzam subbed in for Averna.
  • Too sweet, as written. Go to 0.25oz as suggested in the other notes. Otherwise great. Reminds me of a Rosita.
  • I dropped maple syrup to .25. Still pretty sweet, but good mix of flavors.
  • Nice but very sweet. 1/2 as much maple might be better. I guess it depends on the syrup quality.

Instructions

Muddle two slices of peeled cucumber in a mixing glass. Add tequila, Cynar, Drambuie and stir well with ice. Rinse a chilled glass with green Chartreuse. Double strain into prepared glass and express and discard lemon twist. Garnish with thin cucumber slice.

  • Used Ransom Old Tom, 1/4 Tempus Fugit creme de cacao and dash Bittermens mole bitters with 3/4 CioCiaro to approximate Meletti, K&L select barrel Elijah Craig for the bourbon.
  • One of the best uses of Fernet I've ever had - where the Fernet is actually complementary / matched. Strong drink, but excellent. I used Ransom's Old Tom and Bulleit.

Higher math was always a stumbling block, so I was hesitant to try "Silvio's Algorithm." Until I looked at the ingredients, that is! I knew from the beginning that this drink was the Drinker's Drink. And the proof was in the pudding, as it were.

I used Bols Genever Amsterdam gin--barrel-aged as specified, Angel's Envey, a good, but not well known bourbon--this batch distilled in port wine barrels at 86.6 proof, a skinney Fernet Branca, Aperol, and Amaro Meletti. And lemon zest, to finish it off. This is an incredibly smooth drink. The Meletti is there, as is the Aperol. Both provide a slight but necessary bitterness. The Genever gin sits quietly in the background, giving room for the bourbon to speak up, but softly so. And the lemon zest is a necessary must, to round out the flavors.

There is a lot of alcohol in this drink, so plan accordingly. Two of these says get an alternate driver! But this drink is like a potato chip; it's hard to stop with one. So enjoy, but be careful. I rate "Silvio's Algorithim at a well-deserved 5.0.


Used St. George Dry Rye Reposado for fear that an Old Tom might be too sweet.  The result felt a little too astringent.  Would try Genever next time around.
