3⁄4 oz Dark Crème de Cacao

Instructions

1. Add all ingredients into a shaker. Stir to fully dissolve the lemongrass turmeric paste.
2. Add ice and shake vigorously, then strain into a frozen coupe glass.

1 oz Rum, Cruzan Aged Dark ("extra aged" but any aged rum will do)
1 oz Virgin Islands Rum, Cruzan Blackstrap
3⁄4 oz Ginger liqueur, Domaine de Canton
1 oz Pineapple juice
1 oz Orange juice
1⁄4 oz Lemon juice
1 t Honey (raw unfiltered)
1 t Grade B maple syrup
4 oz Water
1 ds Vanilla extract
1 Cinnamon stick
3 Cloves
2 ds Bitters, Angostura
1 T Butter
1 pn Nutmeg
1 pn Cinnamon
1 pn Cayenne pepper
1⁄2 t Lemon zest
Instructions

Heat all liquids, cinnamon stick and cloves in small pot, simmer on low heat for 5 mins and stir to dissolve maple syrup, pour in mug hot, float butter pat and dust with lemon zest, cinnamon, nutmeg and cayenne on top.

Instructions

Add all but grenadine to shaker with cracked ice. Shake vigorously and double strain into a coupe. Pour grenadine over back of barspoon to create layered effect at bottom of glass.

Notes

Homemade grenadine strongly encouraged over the bottled kind.

Exploring atypical combinations and found junmai sake and mezcal to make a great pairing. Perfect for riding off into a sunset at the end of a long day.
