1⁄2 oz Apple brandy (Aged such as a VS Calvados or Laird's Bonded)
3⁄4 oz Dry vermouth
1⁄8 oz Apricot liqueur
1⁄8 oz Cinnamon syrup
2 ds Orange bitters
Instructions

Stir with ice, strain into a cocktail coupe, and garnish with an orange twist.

Notes

Stone fruit, orchard fruit, pine forests, cinnamon spice.

History

I got inspired by the apricot liqueur-cinnamon syrup combination and decided to fit that into one of my Martini riff structures. With apple brandy as the minor spirit, the combination became an elegant autumnal tipple. While tasting the result, my Pandora radio station was playing Depeche Mode's "Enjoy the Silence" song, and the name stuck.

This is a drink that is both tangy and sweet. And delicious! For the gin I used Hendrick's Solstice, which is a limited gin. I believe this will be a better drink by using a gin that has some body, either a botanical gin or highly juniper gin. This is because of the sweetness (Aperol and St Germain) and the tanginess from the lemon juice. A gin such as Beefeater's is likely to be swallowed up by the other ingredients. This is an enjoyable drink, either before or after dinner. Or on a hot day. Enjoy!

Double Grape

1 3⁄4 oz Pisco, Barsol
1 3⁄4 oz Byrrh
1 ds Grapefruit bitters, Bittermens Hopped Grapefruit
1 twst Orange peel (twist and discard)

If you really want a funk bomb remove the Hamilton 86 and use 2 oz of clairin. It might be wise to serve that with crushed ice in a rocks glass.

History

I named the drink after the Sans-Souci Palace, which was built for King Henri I of Haiti in 1813 near Cap-Haïtien. This palace was considered the Versailles of the Caribbean. It unfortunately was severely damaged in an earthquake in 1843. It is now a UNESCO World Heritage site.

Was looking to use up some Peligroso Cinnamon I had in inventory. You could also use your own cinnamon infused tequila (a multi day process for standard infusing, or a few hours via sous vide). For the coffee syrup, I mixed equal parts Aeropress coffee (between a French press and espresso in strength) with demerara sugar.
