1 oz Rhum Agricole (Lightly aged such as Rhum JM Gold or Trois Rivieres Ambre)
1 oz Cognac
1⁄4 oz Navy strength rum, Smith & Cross
2 ds Absinthe (Rinse)
1 twst Lemon peel (Garnish)
Instructions

Rinse cocktail glass with absinthe. Stir rest of ingrediants with ice and strain into the glass. Garnish with lemon twist.

94 grams water
4 grams citric acid

History

Initially made with Nonino, but then switched to Braulio when supply became an issue. According to Fred Yarm, Nonino is a bit softer whereas Braulio is more complex and interesting. Braulio adds an alpine mint finish.

The backstory was that in early 2013, Victor Pelegrin at Russell House Tavern created this Boulvardier riff called the Man About Town. Bar manager Sam Gabrielli declared that it was so good that it would stay on the menu as long as Vic was working there. I had the drink shortly after it was created and a few months later I was working there and made plenty. Towards the end of 2013 or early 2014, Vic departed for the West Coast to raise his family, and Sam was true to his word and took the drink off the menu. Sam created this tribute that stayed on the menu until Sam left to go to South Carolina in mid/late 2014.

Shake. Double strain to Collins with cracked or pebble ice. Garnish with thyme sprig

Great fresh chartruese forward drink. May be worth muddling the first thyme sprig in as the thyme could have been more prominent.


Full Circle

1 1⁄2 oz Dominican Rum, Brugal (Anejo)
1⁄4 oz Amaretto, Disaronno (Alternatively use Cointreau/triple sec)
3⁄4 oz Grapefruit cordial (see note)
1 ds Bitters, Angostura (optional)
Instructions

Shake, strain, rock. Fine strain if you must.

Notes

Grapefruit cordial: for reference, see Paloma (Fully Loaded), but this is slightly simplified. Add peel of one pink grapefruit to jar, bury it in 3/4 cup of sugar and refrigerate for one day. Add juice of 1 pink grapefruit juice and half a lime, 2 oz. water, 1/2 tbsp. salt. Shake repeatedly until sugar totally dissolved, then remove peel and refrigerate.

History

I wanted to make one of my favorites, the Fully Loaded Paloma, so I had to make the grapefruit cordial and made it a bit more syrupy, so I decided to make something rum-based, as I love anything with grapefruit and Donn's mix works so well with rum. The bourbon just rounded it all out.

Morgul Blade

1 1⁄2 oz Dark rum, Myers's Dark
1 1⁄2 oz Coffee liqueur, Kahlua
3 oz Coffee (cold)
1⁄4 t Absinthe
1⁄4 oz Black Sambuca
1⁄2 oz Overproof rum
2 ds Bitters
Instructions

Stir together all ingredients in a large Old-Fashioned glass with a couple ice cubes.

Notes

Don't use cold brew, the flavor is too weak.Works well as an after-dinner drink, especially if you need a food-coma antidote.

Use a dark roast coffee. Death Wish (brand) recommended for its high caffeine and fitting the theme of the drink.

Don't overdo the absinthe or Sambuca, the anise will overpower everything else. If you want to reduce the anise you could use 1/2 Teaspoon Absinthe and no Sambuca.

Apollo's Revival

Instructions

Shake together everything but the club soda with ice. Pour into a pint glass* with 2-3 ice cubes. Fill with club soda.

* Needs to be roughly that volume, but a tiki-style mug would be thematically appropriate.

Notes

Variants: You can also make this with 1 oz Don's Mix if you want a more cinnamon-forward flavor, but this version is more balanced.

You can garnish with anything appropriate to Tiki drinks if you want. I'd probably do an orange wheel and a mint sprig.
