Scorched Earth

1 1⁄2 oz Reposado Tequila, Olmeca Altos
1⁄4 oz Santa Maria al Monte
1⁄2 oz Agave syrup
3 ds Peychaud's Bitters (as float)
1 cube Ice (smoked)
Instructions

Shake, strain over one rock of smoked ice in a double old fashioned glass, float the bitters.

The Straight Up has an utterly different recipe for a Scorched Earth: 1 oz each Mezcal, Campari, and Cynar with a dash each of maple bitters and Regan's orange bitters.

The Piledriver

3⁄4 oz Lemon juice
4 spg Mint
1⁄2 oz Simple syrup
Instructions

Gently muddle mint, add all other ingredients and shake well over ice. Strain over crushed ice and garnish with mint.

Instructions

Shake all ingredients over ice, double strain in chilled cocktail glass. Dust smoked paprika over the top.

Notes

Infusion for 750 ml bottle of bourbon: Put 2.5 tablespoons of Lapsang Souchong tea in a tea bag, place bag in 750 mls of bourbon, steep for 1 hour. Remove tea bag and whiskey is ready to use.

Notes

A good gateway drink, tasting like watermelon juice with more tartness, ginger heat, tequila earthiness, and a bit of bitter.

Shake, strain, up, garnish with a lime wedge rested on a pair of mint leaves such that it looks like a bird in flight.

Notes

Named for a large leaf used to fan oneself, the Palmyra is, according to Fred Yarm, a "Boston classic" from the early days of the cocktail renaissance. Its huge pour of booze and vodka base speak to an earlier era, but according to Yarm the drink still holds up.

Rain should really be called for in this. I know it doesn't make a huge difference, but as a Bostonian it's a key point. Plus, this drink is how No.9 gets a bunch of the BT antique collection every year - they threaten to start using a different vodka, and they make so many of these that the distributor relents...
